Fall Soups and Stews
Mmm is there anything that screams Fall more than a hearty soup? Soups and stews are some of my favorite things to cook during the ‘ber months!
I make all of my soups and stews in my Instant Pot! They are all super simple to make, and taste delicious. I will frequently make a couple soups on the weekend to use throughout the week for quick and easy lunches and dinners.
I can’t wait to hear which one is your favorite! I can’t choose just one.
Instant Pot Lentil Chili
Lentil Chili is the recipe you never knew you loved! Even my kids will devour this quick and easy meal in 5 minutes flat! This delicious Vegan dish is simple and packed full of flavor and the most amazing aroma will fill your kitchen! I am certainly not Vegan but I love putting the freshest ingredients possible in my body. It might be my Vegetable Broth or the combination of lentils and assortment of fresh veggies, but this recipe never ceases to amazing me.
Vegetable Broth
This broth is so simple and can be canned to use later on! I use this broth in my Instant Pot Vegetable Soup, my One Minute Instant Pot White Bean Soup and so many more! This broth will quickly become a staple for all of your soups and stews this season.
Chicken Brown Rice and Veggie Soup
This Chicken, Brown Rice and Vegetable Soup is a bonafide miracle worker. No, really. It has special magical powers. This soup can actually make you feel better if you’re under the weather or… in the weather. My entire family devours this soup within minutes, it’s that good.
Mama’s Simple Instant Pot Chili
This is my absolute favorite recipe to make for my husband and my kids. It makes me feel closer to my Mom in some sort of weird way. I love making this during the colder months. It’s not officially Fall in my house until the first batch of chili is made.
Instant Pot Corn Chowder
This dairy free Corn Chowder recipe is a scrumptious substitute for chowders chalk full of half and half and heavy cream! I substitute dairy in this recipe for almond milk which adds the best flavor without the guilt! This will quickly be a regular recipe you will be making all the time.
Chicken Tortilla Soup
This soup will warm you right up on a cold day! When I am looking for a good kick of spice this is my favorite. If you’re craving Mexican food this soup will do the trick!
Instant Pot Beef Stew
This Instant Pot Beef Stew recipe is the definition of simple but it’s delicious in its simplicity and gets better the longer it sits. Pot Roast is just a great All American food that most families sit down together and bond over. This is a slight twist on the average Pot Roast and I think you’ll love it.
10 Minute Chicken Stew
Ten Minute Chicken Stew is something the whole family will love. A quick and easy one pot meal that will have mom, or dad, in and out of the kitchen in under 15 minutes! I love a quick meal that the entire family will love too! When it’s healthy too it’s a no brainer.

Taco Soup is one of my yummiest go to’s. Plus it makes getting rid of leftovers so easy, you basically just toss everything into the pot, and it’s instant dinner! This is a favorite of my husbands. He loves it when I make and I’m not going to lie, I think I like it more.
Instant Pot Vegetable Soup
I love making this Vegetable Soup on days where I know I’m going to be running around and my day is going to be hectic. This is a great recipe to make in your Instant Pot and it takes such a short time, that anyone who is busy would be able to make it and enjoy it.
Vegan Black Bean Soup
This delicious Black Bean Soup is a quick and easy dinner that will fill you up and keep your kiddos coming back for more and more! This soup is made entirely in the Instant Pot and can easily be doubled or tripled for large crowds! I will frequently make this with my Instant Pot Baked Potatoes for a crowd pleasing meal.

Hi. I have been searching for a recipe you had posted at one time that was called Green Chili Chicken or something similar. The ingredients called for tomatillos, serrano peppers, poblano peppers and other types of peppers. I made it and it was sooooo delicious. Is it in your new cookbook?
