Kamut Dinner Rolls Makes 9 1/2 cup warm water 2 t Kamut Dinner Rolls
Makes 9

1/2 cup warm water
2 tablespoons extra virgin olive oil
2 tablespoons raw honey 
1 tablespoon yeast
Let sit until yeast is bubbly (about 8 minutes)

Stir in 1 egg
1/4 teaspoon sea salt

1 cup organic kamut flour 
1 cup organic, unbleached, unfortified all-purpose flour or gluten-free flour blend of choice 

Add 1/2 cup flour at a time with a hand or stand mixer until you have a soft dough that isn’t sticky.
Kneed for 5 minutes.

*notes: 
•When measuring your flour make sure to spoon it into your measuring cup and gently level it off without compacting it. 
•If the ball is still very sticky and too hard to work with add a little more flour. 

Divide into 9 equal pieces and form into balls. Place in a greased pan and cover with a damp kitchen towel. Allow to rise for 20 to 40 minutes in a warm place. 

Lightly brush with melted butter and bake at 400°F for 10 to 12 minutes or until lightly browned.

9 weeks ago I finally took my booty to the doctor 9 weeks ago I finally took my booty to the doctor to try to get to the root of why my body was having a difficult time releasing fluid and why sponges looked like the most delicious item in the grocery store.

It turns out my iron and ferritin were very low. My doctor recommended that I begin an iron tonic and focus on food rich in iron, vitamin A, copper and retinol which = bioavailable ceruloplasmin.

Hypothyroid and anemia go hand in hand. It came as no surprise to see that my TSH and T3 were off again. I know this whole mess was triggered last holiday season when I jumped tummy first back into heavily processed foods and refined sugar. The standard American diet greatly diminishes my ability to convert T3. 

Over the last few years, I’ve found that I do a pretty good job at maintaining my TSH and T3 with whole foods. But if i go back to the way I used to eat everything goes pear shaped again and it takes me a long time to bring the number down to normal limits without the assistance of thyroid hormone. 

9 weeks ago, I began taking @organic_olivia Thyropro and focused on foods high in selenium, thyrosine, and iodine. This required me to add quite a bit more animal product back into my diet. 

My numbers improved, not as much as I was hoping, but it proves that I’m on the right path. Onwards and upwards. ❤️ always learning.
We haven’t been to our local Costco in months! I We haven’t been to our local Costco in months! It’s a 40 to 50 minute drive and with gas prices it hasn’t been worth it lately. I was in town at a doctors appointment today so I stocked up on alllll the Costco things!

5 1/2 miles this morning with Tikka through my bac 5 1/2 miles this morning with Tikka through my backyard. Feeling like the luckiest girl to live amongst the Dr. Seuss trees in the desert and to have all these secret views just a few steps from my front door. 

I was thinking about how intimidated I’ve always been to go backcountry hiking and I had to laugh at myself because I hike the back country regularly, the back country IS my backyard. I’d just never thought of it that way before.

So here’s to different perspectives and tackling the things that scare us. Maybe it’ll turn out that they aren’t so scary after all. ✨🫶
Instant Pot Turkey Chili Serves 6 2 tablespoons Instant Pot Turkey Chili 
Serves 6

2 tablespoons Grass-fed butter 
1 medium onion, diced 
2 medium jalapeños, diced
4 large garlic cloves, minced
1 pound ground turkey
4 cups precooked pinto beans
4 cups precooked black beans 
2 medium tomatoes, diced
2 tablespoons tomato paste
1 16 ounce can tomato sauce 
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dried oregano
2 1/2 teaspoons fine sea salt
1 teaspoon fine ground black pepper
1/4 teaspoon cayenne pepper
1 1/2 cups bone broth
1 cup water 

1. Preheat your Instant Pot using the SAUTE function on the display panel. When the display reads HOT add the butter, let it melt. Then add the onion and jalapeño, sauté until tender, about 5 minutes. Add the garlic and turkey, sauté until the turkey has browned, about 5 minutes.

2. Add the rest of the ingredients. Place the lid on the pot and make sure the pressure valve is in the sealing position. 

3. Using the display panel press the CANCEL button. Select the MANUAL/PRESSURE COOK button and use the +/- buttons until the display says 5 minutes. 

4. When the pot beeps to let you know it's finished, vent the pressure, and stir before serving warm with your favorite crackers.
