My Aunt and Grandma have been visiting Aruba for t My Aunt and Grandma have been visiting Aruba for the last 20 years, it was a bucket-list trip for me. We had planned to go for my aunts 50th birthday but then C shut the world down. This year was our first opportunity since to finally see the little island I’d always dreamed about! 

We stayed at the Holiday Inn Resort Aruba, it wasn’t the nicest place we’ve ever stayed but it was in everybody’s budget! The Marriott was more grand if you’re willing to spend a little more to get a little more. 

My favorite things had little to do with accommodations, as we spent little time in our rooms, and more to do with experiences. My favorite things, by and far, were:

1. Lazing in the ocean all day. The water is gorgeous (though not as clear at Palm Beach because of all the boat traffic) but absolutely stunning. It reminded me of Florida or Mexico and one day while on an adventure we found our own little cove on the road between the cave pool and natural bridge! We had the whole beach to ourselves for the day! That’s something you certainly never get in California. Make sure to bring goggles or a snorkel because there are fish everywhere!!

2. We logged so many steps walking to dinner and shopping every night! J.E. Irausquin BLVD is chalk full of shops and restaurants. Our favorite places to eat were: 
Chicken and Lobster
Giannis
Lola Taqueria (the Korean Tacos)
And Eduardo’s on the beach

It was also nice to snag drinks at our Hotel from 3 to 5 every day for happy hour. The food wasn’t the best I’ve ever had and the prices were $$$ but I wasn’t there for the food. 

3. My favorite thing that we invested in while on the island was a catamaran tour. We did the lunch trip through @octopusaruba .There were 15 people on the boat, total. There was plenty of space and honestly it felt very intimate and private. They served lunch and snacks and had an open bar. It was 4 hours long with two stops where we were able to snorkel and see a sunken WW2 ship, octopus, turtles, and lots of fish.

It truly was an unforgettable experience and easily one of the top 3 coolest things I’ve ever done.

4&5. Renting a jeep to drive around the island. It was great to explore the not so touristy

I’m on a diet because I’m fat. —> I’m eating more nutrient dense food because it makes me feel good! ⁣
⁣
I shouldn’t eat that because I need to lose weight. —> I would like to eat this, let’s find a version with awesome ingredients that make me feel energized instead of sluggish. ⁣
⁣
I can’t go because there will be food that tempts me. —> I know my boundaries and I’m going to try my best to respect them while having a great time with friends. ⁣

I can’t believe I ate that! I just messed up everything! I’m not going to eat tomorrow. —> So I ate some cake, cake is delicious and it was a fun experience. Let’s have something nutrient dense for dinner. ⁣

Hating my body never manifested positive long term change. It only made me feel crummy. When I began to accept myself as I was, give myself lots of grace, and try to make positive changes for the sake of my health instead of the way I looked, my mindset evolved. ⁣
⁣
Eating well was no longer about being skinny but feeling good. I got addicted to feeling good! I got addicted to learning more about nutrition and the positive ways it can affect our moods, our healing, and our energy levels. ⁣
⁣
Weight loss was just a bonus. ❤️

R E C I P E
Ingredients
1/2 cup nut or seed butter of choice
2 tablespoons protein powder of choice
1 tablespoon pure maple syrup
1/2 tablespoon extra virgin coconut oil
1/2 @hukitchen milk chocolate bar 

* In a bowl combine the peanut butter, protein powder, and maple syrup using the whisk attachment for a hand or stand mixer. Whisk until the mixture turns into a cookie-dough like consistency.

* Divide mixture and roll into 10 balls. Line them up on a cookie sheet or a plate lined with parchment paper.

* In a separate bowl combine the Hu milk chocolate and the coconut oil. Microwave for 60 seconds, then whisk. You can also use your Instant Pot as a double boiler to melt the chocolate.

* Using a fork carefully place a ball in the bowl with the chocolate and coat it. Repeat this process until all the balls are coated. Top with unsweetened coconut flakes and excess chocolate, if desired.

* Place in the freezer for 20 minutes to firm up before consuming. Store in the refrigerator.

The kids had a sleepover last weekend for their co The kids had a sleepover last weekend for their cousins birthday so Brady and I spent his birthday in Palm Dessert. We started the day with shoe and shirt shopping @nordstromrack . Brady had a lot of meat the day before and wanted vegan cuisine for his birthday so we stopped by @cheftanyaskitchen for lunch. Hadn’t been to the mall in awhile so we visited @barnesandnoble next and Brady got @coldstone . When we walked back out to the parking lot we discovered that I had a bolt in my tire. We poured sweat as Brady changed it in 103°F heat. 😩

After that we didn’t feel like going to the fancy dinner I had planned @workshopkitchenbar so we went to The River and finally saw Top Gun Maverick. It was a great movie! Birthday boy requested @officialchlpotle salads for dinner and more ice cream for dessert. We picked up some @tillamook and went home. 36 has us so old that we can’t even make it through a single movie in bed anymore and we crashed 45 minutes later. Top day. ❤️

One of them listed out all of the traits I wished for in a partner; strong, kind, loyal, respectful, honest, courageous, generous, intelligent, funny, caring, the best Dad, someone who puts others before himself, someone who can make me laugh while simultaneously sweeping me off of my feet, someone who loves God the way that David did. 
It was a dream list, something I never actually expected to manifest into a real human being, so imagine my surprise to have received a partner that’s even MORE.

🤠 Southwest Summer Salad 🥗 3 medium zucchi 🤠 Southwest Summer Salad 🥗 

3 medium zucchini, spiralized and cut into bite sized pieces
5 ounces cherry or grape tomatoes, cut in halves or fourths
1/2 cup chopped cilantro
1/4 cup diced red or yellow onion
2 cups chickpeas or black beans 
1 cup corn
2 small avocados, cut into bite sized pieces
1/2 cup avocado oil
1 lemon or two limes, juiced
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon kosher sea salt
Pinch of cayenne pepper 

Mix and refrigerate until it’s time to serve!

AirFryer Rotisserie Chicken
3 to 5 pound whole chicken, neck and innards removed 
2 tablespoons oil of choice, I used avocado oil
1 tablespoons kosher sea salt
1 1/2 teaspoons ground black pepper 
1 teaspoon garlic powder
1 teaspoon paprika 
1/2 teaspoon dried basil
1/2 teaspoon dried oregano 
1/4 teaspoon dried thyme 

•Combine the oil and spices in a bowl. Rub it all over the chicken. 
•Place the chicken in the AirFryer breast side down. Airfry for 50 minutes at 360°F. Flip the chicken breast side up and airfry for an additional 10 minutes. Make sure chicken has reached 165°F internally before serving. 

Tip: save those bones to make chicken bone broth later!
