Brown Lentils and Wild Rice with Roasted Broccoli
For today’s “I haven’t been to the grocery store in two weeks!” lunch— We have a tasty bed of Brown Lentils and Wild Rice (found in the back corner of my pantry) cooked to perfection in the Instant Pot Pressure Cooker!
To liven things up a bit, I tossed some frozen broccoli into the Air Fryer! As you can see, even when you only have shelf-stable ingredients and frozen vegetables— with a little know how you can create a very tasty lunch!

Brown Lentils and Wild Rice Ingredients
- 2 1/2 cups bone broth
- 1 cup brown lentils
- 1 cup wild rice
- 1 large lemon, juiced
- 2 tablespoons tahini
- 2 tablespoons coconut aminos
- 2 teaspoons minced garlic
- 2 tablespoons rice vinegar
- 1 tablespoon fish sauce
Roasted Broccoli Ingredients
- 1 pound frozen broccoli
- 1 1/2 teaspoons extra-virgin olive oil
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon fine sea salt
Instructions

- Combine all of the ingredients in an electric pressure cooker. Place the lid on the cooker and make sure the vent valve is in the SEALING position. Using the display panel, select the MANUAL/PRESSURE COOK function and HIGH PRESSURE. Use the +/− buttons until the display reads 18 minutes.
- When the cooker beeps to let you know it’s finished, switch the pressure knob from the SEALING to the VENTING position, causing a quick pressure release. Use caution while the steam escapes—it’s hot.
- Serve warm alongside your roasted broccoli.
Roasted Broccoli Instructions
- In a large bowl, toss the broccoli with the olive oil, ground black pepper, and sea salt.
- Add the broccoli to the basket of a 6-quart air fryer and bake at 400° for 6 minutes. Shake the basket to toss the broccoli. Serve warm.
Are the lentils cooked before they go into the instant pot?
No, they are not.
I was not sure what to expect while making this recipe. Wow so good!!! Just for my test I would put a little less vinegar/lemon combo.

This may be a dumb question: If I doubled this recipe, would you double every ingredient including the lemon? Also, do you know if the time would need to be adjusted? TIA
