Instant Pot Baked Potatoes

The Instant Pot makes an easy task even easier, these Instant Pot Salty Baked Potatoes come out perfect every time.

Who doesn’t love a good baked potato?

Instant Pot Baked Potatoes are a great side dish or main course! And to top it off they only take a few minutes to cook to perfection!

My grandparents used to have Brady and I over for game nights and they’d microwave potatoes in plastic bags. I didn’t have a clue back then that microwaving in plastic could actually cause the plastic to break down and attach itself to your food. Not so yummy. This method is just as easy but you don’t have to worry about anything extra hitching a ride on your potato!

Generally, I like to serve our baked potatoes with a big leafy green salad. It’s an easy week night dinner that no one complains about. Mom win! If I have leftovers I need to use up, these pair great with homemade chili, taco beef, or salsa chicken.

There are a variety of toppings to chose from on baked potato night!

Here are a few of my favorites:

Basics:

  • Sea Salt
  • Pepper
  • Butter/Ghee
  • Sour Cream or Greek Yogurt

Cheese:

  • Vegan Nacho Cheese
  • Shredded Cheddar
  • Feta
  • Grated Parmesan

Fresh herbs and seasonings:

  • Chives
  • Cilantro
  • Dill
  • Red Pepper
  • Basil

Meats:

Vegetables:

  • Red Onions
  • Steamed Broccoli
  • Tomatoes
  • Sun-dried Tomatoes
  • Sauteed Spinach
  • Grilled Onions
  • Sliced jalapenos (fresh or pickled)
  • Guacamole

Instant Pot Baked Potatoes

Ingredients

  • 3 pounds whole baby red potatoes, washed
  • 1/2 cup fine sea salt
  • 6 cups water

Instructions

  • Place all of the ingredients inside of your electric pressure cooker. Place the lid on the pot and make sure the vent valve is in the SEALING position. Using the display panel select the MANUAL/PRESSURE COOK function. Use the +/- buttons to program the pot to 2 minutes.
  • When the pot beeps to let you know it's finished let the pressure naturally release for 12 minutes. Vent the pressure and remove the lid.
  • Using a slotted spoon, remove the potatoes from the pot, let cool slightly and serve with your favorite toppings.

  1. Thank you Brittany for these amazing recipes. I have had my instant pot for two years and never really found recipes or cookbooks that I liked. So I rarely used it. I saw an article about you on DailyMail and had to check out your site. I was so excited to see the recipes and your healthy transformation.
    Your recipes are wonderful! They are easy and delicious. My family looks forward to each new dish I prepare in my instant pot. Right now I am making the Beef stew. The house smells great! I am really looking forward to buying your Cookbook when it comes out.

  2. Actually, the recipe says 1/2 cup salt. That still sounds like an awful lot of salt to me! Just wanted to check if the amount really is correct. Thank you.

      Thanks so much for reaching out. I am sure it’s a half cup. In this recipe you are cooking them in salt water and it makes them super nice and crispy when they dry out a little bit.

  4. Can I cut this recipe in half? Will it work with 1&1/2 pounds of potatoes 1/4 cup salt and 3 cups of water, cook for same amount of time?
