Think you’ve found the absolute perfect method for cooking chicken inside of your Instant Pot? Well think again! This Instant Pot Cilantro Lime Chicken is about to blow your tastebuds minds! (Is that a thing? Let’s make it a thing!)

This Cilantro Chicken marinade is so delicious, you could eat it with a spoon! But don’t, save it for the chicken, it’s better that way! It’s a fabulous way to spice up taco night or build your own Zesty Chicken Salad, I think the pièce de résistance is that it pairs beautifully with my Homemade Salsa recipe. And all the pico de gallo lovers said, amen.

Instant Pot Cilantro Lime Chicken

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 6 cloves garlic, finely chopped
  • 1/2 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoon extra virgin olive oil, divided
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup low sodium chicken broth or stock

Instructions

  • In a small bowl combine the chicken, garlic, cilantro, lime juice, 1 tablespoon extra virgin olive oil, sea salt, and black pepper. Cover the bowl with plastic wrap and place it inside of the refrigerator. Allow chicken to marinate for 4 to 12 hours.
  • Preheat an electric pressure cooker using the Sauté function, press the button multiple times until the display panel reads MORE. When the display panel reads HOT add 1 tablespoon extra virgin olive oil and arrange the chicken breasts in a single layer on the bottom of the pot. 
  • Allow the breasts to cook for 5 minutes on each side. Add 1/4 cup chicken broth, then place the lid on the pressure cooker. Make sure the vent valve is in the SEALING position. Select the MANUAL/PRESSURE COOK function and HIGH PRESSURE. Use the +/- buttons until the display reads 6.
  • When the cooker beeps to let you know it's finished, let it naturally release the pressure for 5 minutes before switching the vent valve from the SEALING to the VENTING position. Use caution while the steam escapes, it's hot. 
  • Carefully remove the chicken from the cooker and serve warm.

  2. I only had about an hour to marinate this and I couldn’t believe how juicy it was!!! I can’t even imagine if I marinated it all night. Perfect off the BBQ and cut up over a salad. It’s a keeper!!!

  3. Chicken was so juicy & flavorful! We will be making this again & again. I even froze uncooked chicken with the marinade, let it thaw in the fridge and grill. So easy!

  6. I really like your recipes, but I sure do wish they came with nutrition information! I’m keto but my family isn’t, so I concentrate on proteins that I can eat and that my family will enjoy, and without knowing the net carbs, I tend to scoot past your delicious recipes because it is a pain to import them only to see that I can’t eat it. 🙁

  7. I was wondering if you had ever had a problem with your instant pot getting to presume with only 1/4 cup liquid? I have read you always need a minimum of 1 cup so I’ve never tried less. Looking forward to trying many of your recipes!

      Thanks for reaching out! If you have 6 quart Instant Pot (which is what this recipe was written for), you will be fine following the recipe exact. Chicken releases a lot of moisture when it cooks, and that is what enables the pot to come to pressure for this recipe.

  8. This was delicious. I will be making this all the time. I also used the leftover liquid from the chicken to make my rice, and it was so yummy.
