Sweet Potato Pie Latte

Loving this tasty Sweet Potato Pie Latte lately! Its so simple and really hits the spot when I’m craving something sweet.

Sweet potatoes are a rich source of vitamin A, potassium, and fiber. They’re also high in vitamin C and beta carotene which means they’re great to consume at this time of year to help boost your immune system!

Sweet Potato Pie Latte

Ingredients

  • 1/2 cup canned coconut milk
  • 1/3 cup steamed sweet potato skin removed
  • 1/4 cup water
  • 1 scoop collagen peptides optional
  • 3 tablespoons hemp hearts
  • 1/2 teaspoon 100% pure maple syrup
  • 1/4 teaspoon pumpkin pie spice
  • nutmeg for sprinkling

Instructions

  • Add the coconut milk, sweet potato, water, collagen, hemp hearts, maple syrup, and pumpkin spice to a high powered blender.
  • Blend on high for 4 minutes or until the mixture is smooth and steaming.
  • Serve in a large mug with a sprinkle of nutmeg.

Notes

If your blender does not have the ability to make things hot, blend the mixture until smooth. Then warm in a sauce pan on the stove top over medium-high heat.

  1. This is delicious! I’ve made it a couple of times this week. Having my Vitamix on that long rattles my nerves (it’s so loud!), so I blitz it a bit, pour it in a mug & microwave. Thanks for a great recipe
