Cinnamon-Sugar Apple Cider Donuts

These fluffy little gluten-free Apple Cider Donuts are a delicious Fall treat to enjoy with your morning coffee or a tall glass of plant based milk! Just because you eat well doesn’t mean you can’t eat WELL. 

Making our favorite Holiday delights out of whole foods ingredients has become a bit of a passion of mine. When my daughter was diagnosed with an autoimmune disease in 2016 I began to clean up our diets. Resulting in a decrease of inflammation for her and a loss of 125 pounds for me.

I was a serial dieter who had the hardest time sticking to an eating plan. Until I decided to throw all the plans out the window. I decided to just eat real food in more modest portion sizes. I stopped restricting and started living and have never felt better. 

Just because you’re trying to lose weight doesn’t mean you can’t still have a donut, pizza or a burger and fries. The key is paying attention to nutritional value of your food. Keep it simple, keep it real, and keep it yummy!

Cinnamon-Sugar Apple Cider Donuts

Makes 9 Donuts

Ingredients

  • 4 large eggs
  • 1/3 cup 100% pure maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 medium to large gala apple, cored and quartered
  • 1 1/2 cups old fashioned oats
  • 1/4 cup tightly packed superfine blanched almond flour
  • 2 1/2 teaspoons ground cinnamon, divided
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon fine sea salt
  • 1/4 cup raw cane sugar

Instructions

  • Preheat the oven to 350°F. Spray a standard donut pan with cooking oil spray.
  • In a high-powdered blender, combine the eggs, maple syrup, applesauce, vanilla extract, vinegar, apple, oats, almond flour, 2 teaspoons cinnamon, baking soda, and salt. Blend on high until well combined, about 60 seconds.
  • Carefully spoon the mixture into the prepared donut pan, filling the cups three-quarters of the way full.
  • Bake for 16 minutes, or until a toothpick inserted into the donuts comes out clean. Set the donut pan on a wire rack and let the donuts cool in the pan for 10 minutes before removing.
  • In a small-wide mouth bowl, combine the remaining 1/2 teaspoon ground cinnamon and sugar. One at a time, place each donut in the bowl and rotate until all of the sides are coated in cinnamon sugar. Serve.

    Love these! Texture is similar to a muffin. Very easy to make. I did have trouble getting the cinnamon sugar to stick to the outside. Not sure how to fix that. But will definitely make these again.
