Air Fryer Sweet Potato Breakfast Tacos
Super quick to throw together these Air Fryer Sweet Potato Breakfast Tacos are an awesome flavor packed breakfast! They are the absolute perfect way to begin the day after a high energy workout and are very very tasty!
One of the things I love about tacos is that they are so customizable. Don’t like corn tortillas? Cool, use flour or cassava flour tortillas! Don’t like cilantro, omit it and add some fresh Pico de gallo instead. Can’t stand sriracha? No worries, these are perfectly paired with my homemade Mexican crema!

Air Fryer Sweet Potato Breakfast Tacos

- 1 pound sweet potatoes, washed well and cut into small bite sized pieces
- 1/2 yellow onion, sliced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon chili powder
- 1 teaspoon fine sea salt
- 1/2 teaspoon ground black pepper
- 4 eggs prepared to your liking
- 8 corn tortillas
- cookingoil spray
Toppings
- cilantro
- green onion
- Sriracha
Instructions
- In a large bowl toss together the sweet potatoes, onion, olive oil, chili powder, sea salt, and black pepper. Place them in the basket of a 5 to 6-quart air fryer and fry for 20 minutes at 380°F, tossing 1/2 way through.
- Remove the potatoes and onions from the basket and set aside. Spray both sides of a corn tortilla with cooking oil spray and place as many as will fit in the basket of your air fryer without overlapping. Air fry at 350°F for 3 to 5 minutes.
- While the tortillas are cooking prepare the eggs to your liking.
- Assemble the tacos by placing a handful of the sweet potatoes and onions inside of a warmed tortilla. Set a bit of egg on top and cover with cilantro, green onion, and a drizzle of sriracha!
