Pumpkin Cake Donuts with Maple Bacon Glaze
When it comes to Pumpkin Cake Donuts with Maple Bacon Glaze, I think decadent is exactly the right word.
I’ve never met a person who doesn’t like a good donut, the issue is that most donuts just aren’t that nutrient dense. A great sugar rush but not super filling, I know they trigger my over eating tendencies, so I decided to develop a donut that was a bit more nutritious, and filling! They’re also dairy and grain free, that’s just the icing on the… donut!
I’m all about no fuss, easy food. When developing this donut I decided to throw all of the ingredients inside of my blender to see what would happen. The results were a delicious light, cakey donut consistency. Winner, winner!
If you do not have a donut pan you can make these into a pancake batter instead. I do this when I don’t feel like turning the oven on but am in the mood for this Autumn-spiced treat. You can also bake them in a muffin tin! There are so many ways to enjoy this yummy recipe!

Pumpkin Cake Donuts with Maple Bacon Glaze

- cooking spray
- 2 large eggs
- 1/2 cup canned pumpkin puree
- 1/3 cup 100% pure maple syrup
- 3 tablespoons water
- 2 tablespoon avocado oil
- 2 teaspoon pure vanilla extract
- 1 cup super fine almond flour, packed tightly
- 1/4 cup coconut flour
- 1 tablespoon flax meal
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
Maple Bacon Glaze
- 2 tablespoons extra virgin coconut oil, melted
- 1 tablespoon 100% pure maple syrup
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon ground cinnamon
- 4 strips cooked bacon, crumbled
Instructions
- Preheat an oven to 350°F. Grease a donut pan with cooking spray, set aside.
- Add the eggs, pumpkin puree, maple syrup, water, avocado oil, vanilla, almond flour, coconut flour, flax meal, pumpkin pie spice, baking soda, and sea salt to a large bowl and use a hand or a stand mixer to combine all the ingredients until smooth.
- Transfer the batter to a piping bag with a large tip or a sandwich bag and cut the tip off the bottom. Carefully pipe the batter into the donut pan until the cups are 3/4th's of the way full. Bake for 18 to 20 minutes or until a toothpick inserted in the center, comes out clean.
- In a medium sized bowl, combine the melted coconut oil, maple syrup, vanilla and cinnamon. Set aside.
- When the donuts are finished let them cool for 5 minutes before removing from the pan. Dip the tops in the glaze and sprinkle with bacon.
Do you have a brand preference on those flours? I see the Wellbees that you link to is actually more expensive than the Bob’s or the Anthony’s, so I am curious if there is a reason that’s the one you chose. Thanks!
Wellbees is my favorite, Amazon is continually changing the prices, they’re usually the cheapest but sometimes Anthony’s drops their price.:) Any almond flour will do!
can you used a substitute for the shortening for the glaze if you don’t have any on hand?
Sure! Grassfed butter would work great!
What is a good substitute for avocado oil? Would grapeseed oil work?

I have McCormick currently but I’ve used several different brands in the past including market pantry. 🙂

We are not grain free. Can you sub all purpose flour? Would it be the same amount?

You can omit the flax meal and the water and you can add an extra egg instead 🙂

Yes they can be frozen.
These were really good for a grain free donut. The bacon glaze really made it. I think it needs to be a tad more sweeter and cinnamon tasting – but that can easily be tweaked. 🙂
