Summertime Strawberry Pie

This sweet no bake Summertime Strawberry Pie is a refreshing grain and dairy free treat!

If you have a sweet tooth like I do, you’ll absolutely love this strawberry pie. It is delicious and nearly impossible to just eat one piece at a time.

Another amazing reason to love this recipe is that it’s so easy to make. You can use your food processor to process all the dry ingredients until smooth. This is a definitely a recipe that will be very popular to share with your friends. Whenever I take this to get togethers, is it usually the first food item gone.

My kids and my husband love, love, love this recipe, and are constantly begging me to make it. It goes well with a cold glass of lemonade on a hot summer day. I just know that you will love this recipe, just as much as I do!

Summertime Strawberry Pie

Ingredients

  • 1 cup Raw Organic Almonds
  • 12 Pitted Dates
  • 2 cups Raw Organic Cashews soaked
  • 1/3 cup Fresh Squeezed Lemon Juice
  • 1/3 cup Raw Organic Honey
  • 1/2 cup Organic Extra Virgin Coconut Oil
  • 1 tsp Pure Vanilla Extract
  • 2 cups Organic Strawberries

Instructions

  • Soak cashews overnight, rinse and drain.
  • Place almonds and dates in a food processor and process until fine and combined.
  • Press almond and date mixture into the bottom of a 9in. cake round, this will be your crust.
  • Place rinsed cashews, lemon juice, honey, coconut oil and vanilla in the food processor and blend.
  • Add strawberries and blend until everything forms one smooth mixture.
  • Pour strawberry mixture on top of the crust and freeze for at least two hours. Enjoy!

  1. Oh my goodness! I made this today, and it was amazing! Not like “it tastes good for being being healthy” kind of thing. Hands down, delish! And now I am just sitting here thinking about the rest of it sitting in the kitchen ??

  2. AMAZING!!!! Like wow!! When I was making this I kept thinking “this is so weird” haha but it was delicious and a perfect summer treat! The crust is so yummy! I did notice the crust held up better the next day after it had froze for 24+ hours. Wouldn’t change a thing!!

  3. I kept it in the freezer overnight as per above suggestion (rock hard), so am wondering if I need to regridgerate now until soft enough to cut? Is semi-frozen what I am aiming for, or just refrigerated?

  4. Using frozen strawberries that have thawed shouldn’t change the consistency since it is a frozen pie, right? Ever tried it?

  5. Can you use a different sweeter, like stevia or monk fruit? Something that does not affect the blood sugar as much.

  6. I would LOVE to make this, but my hubby doesn’t like strawberries. Would it be possible to freeze and just takeout 1 slice at a time?
