One Pot Air Fryer Salmon and Potatoes

This a perfect weeknight dinner when you’re running short on time and patience! This One Pot Air Fryer Salmon and Potatoes cooks up in under 30 minutes and is as simple as can be! 

The potatoes are deliciously crispy on the outside but soft and tender on the inside. They also pair perfectly with this Indian inspired seasoned salmon.

I like to serve something green on the side as well, this is where a bagged salad mix comes in handy if you don’t have time to toss a simple salad. It pairs beautifully with roasted asparagus or broccoli as as well.

One Pot Air Fryer Salmon and Potatoes

Ingredients

  • 2 pounds organic golden potatoes or sweet potatoes, cut into bite sized pieces
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons fine sea salt
  • 3/4 teaspoon ground black pepper
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 skin-on salmon filets, pin bones removed
  • fresh lemons slices, optional

Instructions

  • Combine the potatoes, 2 tablespoons olive oil, 3/4 teaspoon sea salt, and 1/2 teaspoon black pepper in a medium size bowl. Transfer to a 6 quart Air Fryer basket and cook at 375°F for 20 minutes, tossing 1/2 way through.
  • While the potatoes bake, combine 1 tablespoon olive oil, 3/4 teaspoon sea salt, 1/4 teaspoon black pepper, turmeric, cumin, ginger, paprika, cayenne pepper in the medium bowl. Add the salmon and turn them over to coat completely in the spice mixture. Let sit and marinate.
  • Once the potatoes have finished cooking, place the salmon on top on the potatoes, skin side up, and cook for an additional 5 to 8 minutes, depending on the thickness of your salmon. 
  • Cut the salmon filets in half and divide the potatoes between 4 plates, serve warm with a spritz of lemon.

    Made this tonight, so easy-yet delicious! I did a little less cayenne pepper, because we are not big on heat, it still had a nice kick that wasn’t overwhelming!

  3. Thanks for this wonderful recipe. I made this last night and we loved it. I am wondering however how small your “bite size” is because my potatoes were done after 10 minutes. I have the vortex air fryer the same one you have. I have all of your books and love everything new have cooked.

    Great food with less effort…just how cooking should be! Absolutely loved this recipe and will definitely be making again! Also really loved the aluminum foil tip.
