Meal Plan Monday (Jan. 15, 2018)
Busy Busy!
The last month has been a busy one! There are a lot of exciting new things in the works for Instant Loss, I’ll be sharing more soon.
There are also a lot of exciting new things happening with our family. We made the choice to downsize a bit and move to a more affordable area of Southern California. Further away from the coast and into the desert. Many of you on Instagram have mourned the loss of my view but, see below! We’re downsizing the mortgage and upgrading the view, how cool is that?
We close on Friday and are moving this weekend so send lots of prayers and good vibes our way as we pack this week! Next week there will not be a Meal Plan Monday but I’ll be back in action but the 29th.
WORD OF THE WEEK
Do not give up what you want most for what you want right now.
This journey is full of lots of little choices that lead to one great change! Cookies, Dorritios, and McDonalds will always be there. Your health may not be. This. Is. The. Time.
MEAL PLAN MONDAY
Meal Plan Monday is a reminder to be intentional with your planning. Most of my poor choices are made at the end of the day when I’ve put off making dinner or I don’t have anything on the agenda.
Meal Planning is important. The more you do it, the easier it becomes.
Every week I make sure to have ingredients on hand for seven healthy dinners (minimum). Here are seven clean eating dinner ideas for you this week!
MONDAY: Chicken Tortilla Soup
TUESDAY: Chickpea Tacos
Note: Only, the best vegan tacos ever. If you haven’t tried these yet, you’re missing out! You wont even miss the beef!
WEDNESDAY: Breakfast For Dinner! Buckwheat Pancakes
Note: Did you know that Buckwheat is not a grain but a seed. Prepare these awesome pancakes with a side of turkey bacon and eggs. Drizzle with 100% Pure Maple Syrup. These freeze great and store in the refrigerator well for quick morning breakfasts!
THURSDAY: Instant Pot Butternut Squash Soup
FRIDAY: Whole Chicken In The Instant Pot
Note: Reserve leftovers for Sunday Chicken Stew.
SATURDAY: Instant Pot Grain Free Spaghetti
Sunday: Instant Pot Chicken Stew
Note: Use leftover chicken from Friday. Decrease cook time to 1 minute with a 10 minute Natural Pressure Release (NPR).

Can you use a crockpot the same as an instant pot for your recipes?
The cooking times will vary but you could certain convert them. 🙂

Hi Shanay, Thank you for the welcome! We are so excited to be here. Just spent our first night in the new house last night and are officially all moved over. Now to unpack!
I purchased the four week meal plan about a week ago. We have cooked the beef stew, chili, roast and vegetables, Cajun goulash, strawberry cookies, pumpkin blender muffins and apple muffins. Today we made butternut squash soup. We have only had our pressure cooker a few weeks and are so delighted we found your site. Everything we had tried so far has been delicious. Thank you for helping us eat healthy.

Thanks so much for reaching out. Unfortunately they discontinued the brand of turkey bacon that I used to buy at Costco. So I no longer use turkey bacon I use regular bacon from ButcherBox.
