Northern Style Skinny Enchiladas

These Northern Style Skinny Enchiladas are a spicy delight! Get ready to travel South of the border and indulge in a classic Mexican dish.

Most green enchiladas sauces have yucky ingredients like MSG, soy bean oil, sugar, and caramel color. We like to stay away from the store bought sauces and make our own sauces at home as much as possible!

Switching to a whole foods diet can some times be a pain when it comes to getting the whole family on board so I try to make things that resemble traditional meals that we ate before our diet change. I try to bulk things up with vegetables and I use all real food ingredients. I know the change can be scary especially with kids but I am here to tell you it can be done.

My kids absolutely love enchiladas. They eat theirs plain with a scoop of Greek yogurt or sour cream and I eat my serving over a bed of greens topped with extra herbs and veggies. I hope you enjoy these delicious enchiladas!

I love this recipe because its easy to make and cleanup is very easy. After you prep all of your ingredients, you just put them in the oven and then once they are done, let them cool down and you’re ready for a delicious dinner.

You can reheat these very easily, so it’s very good for leftovers. Something that you could eat day after day. They are so yummy, that you just might want to do that.

Northern Style Skinny Enchiladas

Ingredients

  • 6-7 organic corn tortillas torn into silver dollar sized pieces
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup jalapeño salsa
  • 1 (8 ounce) boneless skinless chicken breast, cooked and shredded
  • 1 cup black beans, rinsed and drained
  • 2 small zucchinis, cut into 1-inch cubes
  • 2 tablespoons taco seasoning
  • 1/4 cup green onion, diced
  • 1 cup mozzarella cheese optional
  • 1 medium roma tomato, cored and diced optional
  • 1/2 pound baby spinach optional
  • 1 medium ripe avocado, pitted, peeled, and diced optional
  • 1/4 cup cilantro stems and leaves optional

Instructions

  • Preheat the oven to 350F.
  • Combine greek yogurt/sour cream and jalapeño salsa in a bowl. I like to use my immersion blender but simply stirring it with a spoon will work! Set aside.
  • In a separate bowl add chicken, black beans, zucchini, taco seasoning and green onions. Toss until everything is coated with the taco seasoning.
  • In an 11x7 baking dish spread a thin layer of the jalapeño salsa mixture. Cover the bottom with half of the tortillas. Layer with half of the chicken and black bean mixture. Sprinkle 1/2 a cup of cheese overtop and then spread with 1/2 of the remaining jalapeño salsa mixture. Repeat once more.
  • Bake for 35 minutes.
  • Serve warm.

Notes

I prefer to eat a 1/2-3/4 cup sized serving over baby spinach and sprinkled with avocado, tomato, green onion and cilantro.

  3. I have to admit that I was a little skeptical, something about the zucchini, but these were wonderful! I used Greek yogurt and regular salsa. The serving was super filling and I am lookin g forward to lunch tomorrow! Thank you!
