A friend gave me her bread machine for a killer deal and I wanted to start eliminating hidden chemicals in our diets. This ended up being a greater blessing than I realized at the time.
As my children grew I discovered that anytime they ate bread that was not made at home they’d get tummy aches. I knew that it wasn’t the gluten, because they ate minimally processed grain at home. I knew that it wasn’t the yeast because I’d been using that since they were babies.
It was a mystery that followed me for years until I discovered that we all have the MTHFR gene mutation. They estimate that 40-60% of the population has this mutation. It basically means that your body has a hard time with methylating folic acid and B vitamins. When this process is broken the unmethylated vitamins build up in your system, blocking folate receptors, and wrecking all kinds of havoc.

Guess what the food industry likes to fortify flour and lots of other grains with? Folic acid. Which our body doesn’t need anyway, what we really need is folate, but that’s a whole other post.
Grain can be inflammatory so we do limit our intake but we like to treat ourselves to some delicious homemade bread once a month. This is one of our favorite bread recipes, I hope you like it too!

- 1 1/2 cup Filtered Water
- 2 tsp Grass-fed Butter
- 4 cups Organic Unbleached Flour
- 4 tsp Organic Sugar
- 1 1/2 tsp Sea Salt
- 1 tsp Chia Seeds optional
- 1 3/4 tsp Active Dry Yeast
Instructions
- Place ingredients in the order listed into your bread machine.
- Select the FRENCH bread setting, SELECT.
- MEDUIM color, SELECT.
- LARGE loaf size, SELECT.
- Press START. Bread will be done baking in the number of hours indicated.

Hi Brittany, my family ❤️ This loaf of bread only thing I changed was the butter to Earth Balance and I did add in the Chia Seeds,making it Vegan Bread. I made it Sunday it’s Wednesday and completely gone. Thank you for sharing!

You absolutely can! Most loaf pans only hold a 1 lb loaf though so cut the recipe in half. 🙂
Hi – do you have the instructions for making by hand. Don’t have a bread machine but do have 2 good hands and a bowl to let the dough rise in.

Talking about portions; does your hubby eats in the small bowl plates like you do whith most of the meals? Trying to fugure out the portion for my hubby.
Yes, Brittany and her whole family portion control together. The rule of thumb is to eat until you are satisfied not until you are full. Always keep in mind your stomach is the size of a fist.
