The Importance of Keeping a Food Journal- Day 4
Today was a beast of a day! Thursday’s are our busy, out of the house, day. Eating well is always the most difficult for me when I’m away from home.
Meal prep is so important on our busy days. Putting in a little effort the evening before always ensures that I stay on track and keep my stress level down.
I know Thursdays are wild so on Wednesday night I soaked beans and cut up veggies for burritos. First thing Thursday morning I threw them in my Instant Pot and made refried beans. They were ready for dinner by the time we got home. The only energy I had to expend making dinner was warming corn tortillas for the kids and slapping it all together!
This week I’m being intentional about recording everything I eat as I get back on track after the holiday. It will be listed chronologically, with each item (food, drink, or other) appearing in the order it was consumed.
Day 4- Thursday

BREAKFAST

2 fried eggs with homemade salsa

LUNCH- I should have eaten more for lunch today, I got a little too busy and I wasn’t paying attention.
1 blender muffin, broke my own rule and had a little grain

DINNER

Mexi-Salad
-mixed greens

-raw sprouted pumpkin seeds
-tbsp refried beans
–homemade salsa
DESSERT
Peanut Butter Smoothie
-1/2 banana
-1/2 cup almond milk
-1 handful spinach
-1/2 cup ice
-1 tbsp PB Fit Peanut Butter Powder
