Instant Pot Spanish Quinoa

Instant Pot Spanish Quinoa is one of my go-to, throw it all in the pot, crazy day dinners. Done in less than 30 minutes start to finish this meal is a staple in our house.

Quinoa is one of the easiest foods in the world to make and that’s what I truly like about this recipe. This is a great side dish for any entree. It goes well with so many different foods.

I fix this recipe all the time and all of family loves it. Prep for this recipe is so easy, that it will make you want to make this more than you could ever imagine. The best part is that this can all be made in your Instant Pot and who does not love that?

Anytime I go to a potluck this is my dish!  It is so versatile that you can eat it with literally anything!  I am sure your family and friends will love this just as much as mine do.

This recipe is so versatile! Feel free to add jalapeño salsa, a can of green chilis, diced tomatoes etc.

Spanish Quinoa

Ingredients

  • 1 pound ground meat cooked and seasoned with 1/4 cup taco seasoning
  • 1 cup quinoa, rinsed and drained
  • 1 red bell pepper, seeded and diced
  • 1 large yellow onion, diced
  • 1 cup homemade refried or black beans
, rinsed and drained
  • 1 1/4 cups vegetable broth
  • 1/4 cup pickled jalapeño juice or more vegetable broth

Instructions

  • Layer all of the ingredients in your Instant Pot, do not stir.
  • Put the lid on the pot and make sure the valve is in the SEALING position.
  • Using the display panel select the MANUAL function for 10 minutes.
  • When the time is up vent the pressure using the QUICK RELEASE method.

  1. Question I’m new to the whole Insta Pot thing. I’m making this for dinner what pressure does it need to cook on Low or High?

  2. I don’t like quinoa, this was my last attempt on trying it and I LOVED it! I was so surprised and would be recommending this recipe for those on the fence about quinoa.

  3. I was nervous about trying quinoa but this recipe turned out great! Yummy, filling and oh so good. Being from Texas we have to have our Mexican food fix frequently. This recipe is the answer to this fix!

  4. I have made this a bunch of times, such a hit with the family. My husband has recently started a vegan diet so I now make this without the meat and it is still delicious.

  5. This was my first time having quinoa. This was delicious and easy! I used black beans as that was what I had on hand but will definitely make it again and try refried beans.

  6. This recipe was so easy and tasty….I actually thought it was better as left overs!!! … And I usually don’t care for leftovers!! Next time I will definitely try some diced or stewed tomatoes. We left out the jalopeno juice and just used the vegetable broth. Highly recommend… Even if you’re like Mom and you aren’t sure ‘about that q stuff’. Not a drop was left!!

  7. This is our new taco Tuesday! I double it and we eat it for 2 nights and my husband has some left over for lunch. The flavors are so good and the pickled jalapeno juice does give it a special something!! We could eat only this and your chicken tortilla soup and be happy 😍

  14. Another delicious instantloss meal! We made this for the first time tonight. Although my daughter isn’t a huge fan of quinoa she ate the whole bowl. We topped it with homemade guacamole.

  15. The instructions say “Layer all of the ingredients in your Instant Pot, do not stir.” But it doesn’t say what order to layer the ingredients! Does it matter? Meat first? Meat last? Help!

  16. If I’m using dried black beans, I assume I’ll soak the overnight first – do they get cooked on their own after that? or just rinse and drain and add to the recipe as listed?

  19. Oh my gosh! This was delicious and so easy! I had made “refried” beans in the instant pot and had saved it in the freezer. Used it for this recipe. Will definitely make this again.

  20. Do you have to cook the meat before cooking in instapot? Can you just throw it in raw and let it cook with the other ingredients?

  21. I made this the other day with ground turkey, and canned refried black beans. It’s so yummy! I eat a scoop of it on romaine lettuce, kind of like a taco. Thank you so much for this recipe! It is tasty and filling!

  22. Mine came out a liftle bit like porridge/oatmeal style..not sure whats wrong..followed the instruction and added a canned (drained) diced tomatoes and sauted the ground turkey in the same pot…any ideas why ? Flavor is really good tho but woud like to have a little bit firm texture…thank yoi

    If I make this without the ground beef or any meat for that matter should I still cook it the same time length and layer everything else?

    Delicious! I made this in an 8qt Instant Pot, so increased the portions of everything (except the ground meat) by 25%. Turned out perfectly. Thanks for the recipe!
