These Simple Roasted Pumpkin Seeds are a must in our house during the fall. It just isn’t Fall if you’re not carving pumpkins, roasting pumpkins seeds, and making homemade pumpkin puree!
When I was growing up my parents were all about traditions! It didn’t matter which holiday it was we had traditions! Halloween was always one of my favorite holidays because we had so many exciting things we did. These are traditions that I looked forward to as a child all year long. It brought a different kind of magic to the cooling weather and the autumn leaves. I remember how exciting it was going to pick out the perfect pumpkin to carve! Tip: if you plan on carving your pumpkin always try to find one with a flat side. It excites me that I am now able to share these sweet traditions with my own children. I still get a little giddy when I find my pumpkin!

For this recipe, there are only a few simple steps. I start off by getting the pumpkin seeds out of my pumpkin, cleaning them and then adding the extra virgin olive oil and sea salt.
Preheat your oven to 300F and put them on a baking sheet in the oven for 20 minutes. Pumpkin seeds can burn fast so keep an eye on them for the last 15- 20 minutes.

- Raw Freshly Harvested Pumpkin Seeds
- Organic Extra Virgin Olive Oil
- Sea Salt
Instructions
- Preheat the oven to 300F.
- Wash pumpkin seeds. Place all seeds in a bowl and cover with water. The seeds will float to the top and the stringy pumpkin guts will stay on the bottom.
- Dry seeds with a paper towel.
- Toss with sea salt and olive oil.
- Spread seeds out on a baking sheet. Bake for 20 minutes. Then toss seeds and bake for another 15-20 minutes. Enjoy!

The way I’ve always done pumpkin seeds is a bit healthier.
Wash the seeds. Toss with salt, or cinnamon and sugar. Or barbecue seasoning!
Spread them out in a pan. Put them in a 200 degree oven overnight.
Check for crispness in the morning. Shake the pan and give a few more hours if needed.
