Instant Pot Bruschetta Chicken

This Instant Pot Bruschetta Chicken is a new way to spice up your chicken.

I don’t know about you, but I was getting tired of just eating plain chicken, so I decided I needed to find some new recipes to “spice” up the ordinary chicken recipe. This chicken bruschetta hit the spot. It is so yummy and will get even the pickiest eater interested in eating healthy.

I found this particular recipe when I was searching for stuff to make in my Instant Pot. It jumped out at me, and I have been making it ever since. I make this at least twice a month. Usually that is by request from my husband.

This is a fantastic recipe because most of the items needed for the recipe are already going to be in your pantry. Let me tell you about cleanup, it is basically nonexistant and who doesn’t love that?

This Instant Pot Bruschetta Chicken is a recipe I would shout at the top of the mountains. Everyone needs to try it!

Bruschetta Chicken

Ingredients

  • 4 Chicken Breast Thawed
  • 1/4 cup Balsamic Vinegar
  • 4 Ripe Tomatoes Diced
  • 1/2 cup Fresh Basil or 1/4 Cup Dried
  • 2 tbsp Extra Virgin Olive Oil
  • 4 Cloves of Garlic Minced
  • 1/2 tsp Sea Salt
  • Spinach

Instructions

  • Marinade chicken breast in balsamic vinegar overnight or for 1 hour before cooking.
  • Mix tomatoes, basil, olive oil, garlic and sea salt in a bowl and let sit at room temperature for an hour.
  • Pre-heat your Instant Pot using the Sauté function (normal), a cast iron pan on medium, or a grill.
  • Add a couple teaspoons of olive oil to your preheated pan.
  • Place chicken breasts in the pot and cook until edges are opaque, about 10 minutes. Flip to the other side, then cover the pot, and cook for another 10 minutes.
  • Serve chicken over a bed of spinach and top with the tomato mixture.

      1. Are you sealing it when you cover it (twisting it to the right), or just merely setting the cover on top?

  1. I am new to the instant pot. This will be my first meal. Do I need to add water to the pot when cooking this?

  2. Delicious does not even begin to describe this entrée!!!!!!!!!!!!!! No leftovers with this meal – my 15 year old son had 3 servings.

  3. I made the Bruschetta Chicken for my family and my husband said “it looks so fancy”. Then he ate it and declared “fancy and delicious”!! My whole family loved it and I loved how simple and healthy it is. It is a fantastic recipe to have on hand!

  4. This was the first Instant Loss meal I made and it is AMAZING. The first night I made it I did wilt the spinach a little to take away the rawness and have a nice warm meal. But I ate leftovers as salad for the rest of the week and all of my co-workers were jealous 🙂 Definitely a keeper!

  5. Say Whhhat! Man, this was so yummy. The fresh tomato/basil mixture was heavenly. My Husband was disappointed there wasn’t more and asked to put this in the rotation. Now I have to figure out how to keep basil alive in my house.

  9. Can you be a bit more specific with pressure Times when cooking in the instant pot. How much cook time, at what pressure, and NPR Times? Not sure if you are strictly sautéing the chicken or are pressure cooking it.

  10. the instant pot directions say the lid can’t be on in the sauté mode?!?! So how do you cook for 10 more minutes on sauté with the lid on? Thanks 🙂

    Made this last night and everyone loved it! I added some fresh goat cheese to the tomatoes and that took it to the next lever!
