Grain Free Peanut Butter Cookies
These grain free peanut butter cookies are a delicious substitute for conventionally made peanut butter cookies. Although this recipe is grain free it does contain sugar so I limit myself to one or two cookies as a treat. I don’t eat them every day, I might have a dessert treat like this once a week.
When I’m making cookies to take to a get together with my friends or family this is the most requested cookie recipe hands down! I understand why, because they are downright delicious!
Over the years, I have made a large variety of healthier cookie recipes and this one that I keep going back to over and over. Preparation is a piece of cake because a lot of the ingredients for this recipe are probably already be in your pantry. I use my mixer to prepare these cookies and it really helps get the dough smooth and ready for the oven.
Once they are out of the oven and have cooled off, I put them immediately in Tupperware to keep them fresh. I can’t keep them in the house for longer than a couple days when I make them! Hopefully you have better luck than me.
These delicious peanut butter cookies are great paired with a tall glass of my homemade almond milk!

Grain Free Peanut Butter Cookies

- 1 cup Cassava Flour
- 1/2 cup Organic Cane Sugar or Coconut Sugar
- 1/2 cup Organic Brown Sugar
- 3/4 cup Almond Peanut, or Sunflower Butter
- 1/2 cup Nutiva Coconut Shortening
- 1 Egg
- 3/4 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Sea Salt
Instructions
- Pre-Heat oven to 375F.
- Cream sugar, peanut butter, shortening, and egg with a hand or stand mixer.
- Add dry ingredients.
- Using a cookie scoop place batter on an ungreased cookie sheet. Use a fork to make a criss cross pattern.
- Bake for 9 minutes at 375F.
My favorite cookie has always been peanut butter so I was skeptical this recipe was going to taste too “healthy” but boy was I wrong!! I will never make a peanut better cookie with out these ingredients again! Best cookie ever!!
Is coconut shortening different from coconut oil?

What can you use in place of the coconut shortening? Grass fed butter?
