Red Pepper Egg Bites

Starbucks Egg Bites might be high in protein and low in calories but it can be a pricey breakfast if you eat them often! Try this recipe instead, rich and creamy, and high in protein without the price tag.

Red Pepper Egg Bites

12 large eggs

1 cup cottage cheese, I like Good Culture Brand (they have a lactose-free version)

1 cup shredded mozzarella

1 teaspoon fine sea salt

1/2 teaspoon ground black pepper 

5 seeded and diced mini bell peppers 

  1. Preheat oven to 350°F.
  2. Add the eggs, cottage cheese, mozzarella, salt, and pepper to your Vitamix blender. Blend on high for 30 seconds or until well combined.
  3. Grease a muffin tray and set it on top of a jelly roll pan. Fill the cups and sprinkle with bell peppers.
  4. Place the tray in the oven and fill the jelly pan with 1 cup water. Bake for 30-35 minutes. Enjoy!
