Air Fryer Sweet Potato Breakfast Tacos

Ingredients

  • 1 pound sweet potatoes, washed well and cut into small bite sized pieces
  • 1/2 yellow onion, sliced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper
  • 4 eggs prepared to your liking
  • 8 corn tortillas
  • cookingoil spray

Toppings

  • cilantro
  • green onion
  • Sriracha

Instructions

  • In a large bowl toss together the sweet potatoes, onion, olive oil, chili powder, sea salt, and black pepper. Place them in the basket of a 5 to 6-quart air fryer and fry for 20 minutes at 380°F, tossing 1/2 way through. 
  • Remove the potatoes and onions from the basket and set aside. Spray both sides of a corn tortilla with cooking oil spray and place as many as will fit in the basket of your air fryer without overlapping. Air fry at 350°F for 3 to 5 minutes.
  • While the tortillas are cooking prepare the eggs to your liking. 
  • Assemble the tacos by placing a handful of the sweet potatoes and onions inside of a warmed tortilla. Set a bit of egg on top and cover with cilantro, green onion, and a drizzle of sriracha!
