Gluten and Sugar Free Lactation Cookies

  • 1 cup gluten-free old fashioned or steel cut oats
  • 4 tablespoons flax seed
  • 2 tablespoons sesame seeds
  • 1/4 cup coconut palm shortening, ghee, grass-fed butter, or coconut oil
  • 1/4 cup agave nectar, raw honey, or 100% pure maple syrup
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup dairy-free chocolate chips


  • Preheat your oven to 350 F.
  • Add the oats, flax seed, and sesame seed to a high powdered blender and blend until it reaches a flour consistency. If you do not own a high powdered blender you can use oat flour, ground flax and sesame seed instead.
  • In a food processor combine all ingredients and process until a cookie dough consistently forms. Stir in the chocolate chips.
  • Using a 1 tablespoon cookie scoop place dough on a baking sheet lined with parchment paper and lightly press the balls into a 1 in thick disk.
  • Bake for 7-10 minutes or until golden.
