Grain Free Sugar Cookies

Grain Free Sugar Cookies
  • 2 1/2 cups superfine blanched almond flour, tightly packed
  • 1/4 cup 100% pure maple syrup
  • 1 large egg
  • 2 teaspoon ghee or grass-fed butter
  • 1 teaspoon pure vanilla extract I make mine homemade in the Instant Pot
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
Buttercream Frosting
  • 1 cup powdered sugar
  • 5 tablespoons grass-fed butter, softened
  • 1 tablespoon milk of choice or water
  • 1 teaspoon pure vanilla extract
Grain Free Sugar Cookies
  1. Add all ingredients to a food processor and process until a ball of dough forms (about 10 seconds).

  2. Flatten ball into a disk and wrap with saran wrap. Let chill in the refrigerator for 20 minutes.

  3. Preheat the oven to 350F and remove dough from refrigerator.

  4. Remove saran wrap and place dough on a piece of parchment paper. Lay a second piece of parchment paper over the top and roll out the dough with a rolling pin.

  5. Use your favorite cookie cutters to cut shapes.

  6. Bake the cookies on a sheet lined with parchment paper for 8-10 minutes. Let cool on a wire rack before frosting.

  7. Frost with your frosting of choice.

Buttercream Frosting
  1. Add all ingredients to a bowl and combine with a hand mixer.
