Apple Walnut Pound Cake

  • 1 cup coconut sugar blended until fine
 (unbleached organic sugar works well too, no need to blend)
  • 2 cups tightly packed superfine blanched almond flour
  • 1/2 cup coconut flour
  • 1 cup coconut oil
  • 1 cup unsweetened shredded coconut
  • 3 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 3 cups apples diced in a high powered blender
  • 1 cup walnuts chopped
  1. Preheat the oven to 350.

  2. Add all of the ingredients to a large bowl or stand mixer.

  3. Mix well.

  4. Your batter should be very thick. Add mixture to a greased bundt pan.

  5. Tent foil over bundt pan, almond flour burns much faster than regular flour.

  6.  Bake for 1hr 20mins. 
Let sit for 20 mins before you turn it over onto a cake stand.

  7. Frost with icing of choice.

Recipe Notes

Frosting note: I blend organic cane sugar into powder sugar. I combined it with vanilla extract, grass-fed butter and almond milk.
