Instant Pot Baked Potatoes

  • 3 pounds whole baby red potatoes, washed
  • 1/2 cup fine sea salt
  • 6 cups water
  1. Place all of the ingredients inside of your electric pressure cooker. Place the lid on the pot and make sure the vent valve is in the SEALING position. Using the display panel select the MANUAL/PRESSURE COOK function. Use the +/- buttons to program the pot to 2 minutes.

  2. When the pot beeps to let you know it's finished let the pressure naturally release for 12 minutes. Vent the pressure and remove the lid.

  3. Using a slotted spoon, remove the potatoes from the pot, let cool slightly and serve with your favorite toppings.
