Mama's Almond Butter Banana Blender Muffins

  • 1 banana
  • 1 egg
  • 1/2 cup almond, peanut, tahini or sunflower seed butter
  • 3 tablespoons raw honey
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon baking soda
  • 1 pinch fine sea salt
  • 1/2 cup mini, dairy free chocolate chips, divided
  1. Preheat the oven to 400°F.

  2. Add all ingredients, except for the chocolate chips, to a high powered blender.

  3. Grease a mini muffin pan and spoon the mixture into the pan. Sprinkle the tops with the remaining chocolate chips.

  4. Bake for 7 to 9 minutes.

  5. Remove from oven and cool on a cooling rack before serving.

To make these muffins nut-free, substitute tahini for the peanut or almond butter, 1:1.
