- 1 pound ground meat cooked and seasoned with 1/4 cup taco seasoning
- 1 cup quinoa, rinsed and drained
- 1 red bell pepper, seeded and diced
- 1 large yellow onion, diced
- 1 cup homemade refried or black beans
, rinsed and drained
- 1 1/4 cups vegetable broth
- 1/4 cup pickled jalapeño juice or more vegetable broth
