Preheat a baking steel or stone in the oven to 425°F.
Prepare all your pizza toppings.
In a large bowl, add all dry ingredients and mix together well before adding all the wet ingredients. Mix well to combine. The dough should be able to form a ball. The ball should not be sticky, if it is, add a little more cassava flour.
Let dough rest for 5 minutes. Then sprinkle coconut flour on a dry surface and roll out the crust sizes of your choice.
Add 1 or 2 crusts, by themselves, to the oven. Depending on what size pizzas you chose to make will dictate the cooking time for each crust.
Large pizza crust - 12 minutes
Personal pizza crust - 9 minutes
Mini pizza crust - 6 minutes
When the time is up carefully remove crusts, top with your favorite toppings, and put them back in the oven on Broil Hi for 2-3 mins, or until the cheese browns.
Reminder: if you are using a baking stone do NOT remove it from the oven. You'll need to transfer your crusts using a pizza paddle or a baking sheet. If your stone changes temperature too rapidly it will crack!
