1/4cupcoconut palm shortening, ghee, grass-fed butter, or coconut oil
1/4cupagave nectar, raw honey, or 100% pure maple syrup
2large eggs
1teaspoonpure vanilla extract
1cupalmond flour
1teaspoonbaking soda
1/4teaspoonfine sea salt
1/2cupdairy-free chocolate chips
Instructions
Preheat your oven to 350 F.
Add the oats, flax seed, and sesame seed to a high powdered blender and blend until it reaches a flour consistency. If you do not own a high powdered blender you can use oat flour, ground flax and sesame seed instead.
In a food processor combine all ingredients and process until a cookie dough consistently forms. Stir in the chocolate chips.
Using a 1 tablespoon cookie scoop place dough on a baking sheet lined with parchment paper and lightly press the balls into a 1 in thick disk.
