Autumn Roasted Sweet Potatoes with Candied Maple Bacon

Ingredients

  • 1 1/2-2 pounds sweet potatoes peel on and cut into bite sized pieces
  • 3 strips cooked turkey bacon diced
  • 1/2 cup chopped pecans
  • 3 tablespoons 100% pure maple syrup
  • 1 tablespoon avocado oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper

Instructions

  • Preheat the oven to 420F.
  • While the oven is preheating prep all of your ingredients.
  • Place all ingredients in a mixing bowl and combine.
  • Line baking sheet with parchment paper. In a single layer spread sweet potato mixture out onto the baking sheet.
  • Once the oven had preheated, place the baking sheet in the oven and bake for 20 minutes.
  • Stir and continue roasting for 12 minutes. Then switch the oven to BROIL for 5 minutes watching the pecans close so they don't burn.
  • Serve warm.
