Instant Pot Baked Potatoes

Ingredients
  • 3 lbs Organic Baby Red Potatoes
  • 1/2 cup Sea Salt
  • 6 cups Filtered Water
Instructions
  1. Place all of the ingredients in your Instant Pot Pressure Cooker.

  2. Put the lid on the pot and make sure the vent valve is in the SEALING position.

  3. Using the display panel select the MANUAL/PRESSURE COOK function. Use the +/- buttons to program the pot to 2 minutes.

  4. When the time is up let the pot naturally release the pressure. When the display panel reads 12 open up the vent valve and release the pressure.

  5. Strain potatoes. Dress with your favorite fixings!

Recipe Notes

SMASH POTATOES:
1. Set oven to broil.
2. After straining, smash potatoes on a cookie sheet.
3. Sprinkle with mild cheddar cheese.
4. Broil until cheese starts to bubble and brown.
