Grain Free Peanut Butter Cookies

- 1 cup Cassava Flour
- 1/2 cup Organic Cane Sugar or Coconut Sugar
- 1/2 cup Organic Brown Sugar
- 3/4 cup Almond Peanut, or Sunflower Butter
- 1/2 cup Nutiva Coconut Shortening
- 1 Egg
- 3/4 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Sea Salt
Pre-Heat oven to 375F.
Cream sugar, peanut butter, shortening, and egg with a hand or stand mixer.
Add dry ingredients.
Using a cookie scoop place batter on an ungreased cookie sheet. Use a fork to make a criss cross pattern.
Bake for 9 minutes at 375F.
