Blender Mini Muffins

Ingredients
  • 3/4 cup Oats any kind will do, I use steel cut
  • 1 Ripe Banana or 1 Apple cut in fourths core in
  • 2 Eggs
  • 3 tbsp Honey or 3 Pitted Dates
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • Pinch of salt
  • 1 tbsp Flax Seed Hemp Seed or Chia Seed (optional)
  • Toppings of Choice
Instructions
  1. Preheat oven to 350 F.
  2. Put all ingredients in a high powered blender and process until smooth.
  3. If you're using an apple add a tsp of cinnamon to the blender.
  4. Grease muffin pan and fill cups 1/2-3/4 full.
  5. Sprinkle with toppings: granola, dairy free chocolate chips, fruit etc.
  6. Bake for 9-12 mins. (My magic number is 10 mins) Enjoy!
