I think the biggest challenge to the holidays is eating.  There is food everywhere you look!  I have found that you can easily make some simple changes to some favorite holiday dishes and you won’t feel the after dinner guilt (or the need to unbutton your jeans).

I absolutely love the holidays and these are a perfect match for the holiday season. Something I also love is how easy they are to make. An added bonus is prep and cleanup are a breeze. Say goodbye to the days of spending hours and hours cleaning up after a holiday meal!

I start by gathering all the ingredients and preheating the oven to 420F. Then I put all the ingredients into a mixing bowl and combine. Finally I line the baking sheet with parchment paper and spread out the potato mixture.

Once the oven is preheated, I place the baking sheet in the oven and bake for 20 minutes. Stir and continue roasting for 12 minutes. Then switch the oven to BROIL for 5 minutes watching the pecans close so they don’t burn. Watch carefully, because you do not want the pecans to burn (that is the worst).

Serve warm and watch everyone’s face as they taste these amazing potatoes. This is going to put a smile on everyone’s face. If you don’t believe me then try it for yourself.
