Chewy Chocolate Granola Bars

These chocolate granola bars are soft, chewy, and as yummy as a candy bar. They’re dangerous, so be careful and watch your portion size!

If you have kids,  you’ll know that snacks are your best friend and these yummy granola bars are so good. They are great to make and get all the kids involved. My kids love helping me make them. They love getting all the ingredients together and mixing them all up in a bowl.

I really enjoy this recipe because it is so easy to make and cleanup is a breeze. These delicious treats are great to take to play-dates with your kids and their friends. It will be a hit with all the kids and grownups. I would recommend these granola bars to anyone who needs a little pick me up during the day.

Chewy Chocolate Granola Bars

Ingredients

  • 2 cup Old Fashioned Oats
  • 1/4 cup Chocolate Chips
  • 1/4 cup Coconut Oil
  • 1/2 tsp Vanilla
  • 1/4 tsp Salt
  • 1/4 cup Almond Butter
  • 1 cup Pitted Dates

 blended in a food processor on high

Instructions

  • Preheat oven to 350 degrees F.
  • Put oats, chocolate chips, coconut oil, vanilla and salt in a bowl, stir.
  • Place oat mixture in a 9x9 baking dish.
  • 4. Bake for 8 minutes.
  • 5. Add oat mixture back to the bowl (be careful it's hot!). Add almond butter and blended pitted dates. Stir well.
  • 6. Press mixture back into the 9x9 baking dish and place it in the freezer for 20 minutes.
  • 7. Cut and shape into bars.
  • 8. Store in an air tight container in the freezer.

  2. Seriously AMAZING!!!!! I have now made this recipe 3 times and the 3rd time I doubled the recipe. I keep them in the freezer and I feel like I am eating a delicious candy bar.   4. Excited to try this recipe, curious can u sub cocoa powder instead of chocolate chips? If so how much do u think?

  5. These look delicious! I don’t have a food processor but I do have a Vitamix. Could I blend the dates in the Vitamix instead?

  6. I was thinking of making these for a road trip, but then I read about keeping them in the freezer. If they’re out of refrigeration for 2-3 days, is that going to cause texture problems or issues with them falling apart? Thanks in advance! 🙂

  9. can someone tell me which dates (from costco) to get? There is a tub of Mejool dates near the fresh produce and then another tub up front by the dried fruits and nuts. . . which one do I use? Thx!
