Pizza was probably the hardest thing to give up when we went grain free. I immediately began searching for crust recipes that didn’t include grain. I tried almond flour, cauliflower, zucchini, and coconut flour. But None of them hold a candle to this blend of Cassava flour and Arrowroot powder.
Prep all your pizza toppings.
Preheat a baking steel or stone in oven at 425
Combine all dry ingredients in a large bowl. Add the wet ingredients and mix well until mixture forms a ball. Let sit for 5 minutes.
The ball should not be sticky, if it is add a little more cassava flour. The dough will make enough for two 10 in. pizzas, 4 individual size pizzas, or 1 large pizza and a bunch of mini “bagel bites”.
Sprinkle coconut flour on a dry surface and roll out your crusts.
One or two at a time, add crusts, by themselves to oven. Depending on what size pizzas you chose to make will dictate the cooking time.
10 in. crust- 12 mins
Individual- 9 mins
Mini “Bagel Bites”- 6 mins
When the time is up carefully remove crusts, top with your favorite toppings, and put them back in the oven on Broil Hi for 2-3 mins, or until the cheese browns.
Reminder: if you are using a baking stone do NOT remove it from the oven. You’ll need to transfer your crusts using a pizza paddle or a baking sheet. If your stone changes temperature too rapidly it will crack!
